Caper flowers (Capron)

Caper flowers are the flower buds of the caper tree harvested just before blooming when they are fully ripe. A condiment widely used throughout the Mediterranean basin, they are preserved in salt, olive oil or, as here, in vinegar, which develops a hint of acidity which goes well with cold meats and grilled meats. Thanks to their presentation with the tail, these capers make pickles that are particularly popular with aperitifs. In Sicily and southern Italy, it is not uncommon to find these large capers cut into slices in salads or in fish-based pasta sauces.
