Rafa Margós is the ideologue chef of El Paeller.
A unique person with a life dedicated to the wonderful world of paella since his family founded Las Bairetas 30 years ago, a leading restaurant in the preparation of wood-fired paellas and which houses the largest paella pan in the world.
After more than 300.000 paellas behind him and advising chefs of the stature of José Andrés or Quique Dacosta for their mastery of fire, in 2020 the “mestre paeller” sets himself a great challenge: to take his delicious wood-fired paella around the world.
In order to transfer all the essence of artisanal wood-fired paella to the manufacturing process, Rafa designs a giant rectangular paella pan unique in the world.
A work of engineering that allows you to make the sauce and broth in an artisanal way, achieving uniform cooking of all the ingredients and distributing the heat of the wood just like in the classic Valencian circular paella, but in a big way.
