Vinification in white. The skins are immediately separated from the must which ferments at a controlled temperature between 12°C and 15°C in primary froth. Subsequently, for 8 months the fermentation yeasts remain in agitation through the bâtonnage technique. Color: Antique pink color and onion skin reflections. As soon as it is poured, it has a correctly evanescent foam. Smell: The nose opens with elegant hints of violet, currant, raspberry, wild strawberry, as well as notes of yeast and bread crust. Taste: In the mouth it is distinctly fresh and sapid, as required by the vine and the particular soil, rich in fossils. Pleasant velvety sensations follow. It surprises and intrigues.
