From organic coconut plantations, our coconut sugar is produced from the nectar of the flowers of the “tree of life” as it is nicknamed in Asia. Traditionally harvested by incising the efflorescences, the sap is slowly heated, dried, then compacted in a mold which gives it its final shape. This know-how makes it possible to preserve the delicate and authentic flavor of the coconut sugar in pieces. It is naturally gluten-free and unrefined. It has a glycemic index of 35. In comparison, the glycemic index of honey is 64 and that of white sugar is 68. Directions for use: Replaces sugar, agave syrup or natural sweeteners in hot drinks and dairy products. Store in a dry place away from heat. Close well after use.
