Our homemade tomato puree is one of the best and most common preserves to use in home environments. Its flavor arises from some very specific rules, from the choice of Italian tomatoes to use, to the sterilization of the jars, to the process and cooking.   To enjoy all year round, even when tomatoes are no longer in season, a fresh, authentic and delicious tomato sauce perfect for seasoning pasta and enriching many other dishes in the kitchen!     How is it produced?     The best tomatoes are selected, cut and heated to a temperature above 90°.  Thanks to centrifugation, the juice is divided from the peel and seeds.     Concentration occurs by evaporation inside stainless steel systems maintained under vacuum.   The temperature is brought to 65° to guarantee the protection of the organoleptic qualities of the product, after which the puree is pasteurised.
