Mirabelle Cinnamon

One of my greatest joys when I get it into my head to work with a fruit is finding it. I hunt, I taste, I come back several times if necessary, until I find the perfect fruit… This mirabelle plum from Lorraine caught my eye as soon as I entered my supplier. It was golden as you wish and melted in your mouth, all smooth and fragrant. And immediately, it made me think of the cinnamon from Vietnam which was patiently waiting in the laboratory for its time to come. Was it the alliteration of their names that made me predict such a successful marriage? Who knows…
