Muscisca di Maiale is a product of yesteryear which takes up the ancestral habit of shepherds during transhumance. La Muscisca di Maiale revisits this custom up to date: these strips of dried meat that we offer are cut from ham and pork tenderloin. The meat is particularly lean and the chew very firm. It is carefully braised and marinated with chilli and fennel: typical tastes from our region. This is THE charcuterie is ideal as an aperitif.
