Our flours are obtained by selecting only the best durum grains, ancient Sicilian grains and other minor high quality cereals. In the transformation process, we use both the modern cylinder milling method and the more traditional stone milling method. The pasta we obtain has a low gluten content which returns greater tolerability and better digestibility.
