An explosive superfruit! It is in the north of Lebanon that pomegranates are grown, a little bomb of colors and nutrients. The harvest of this jewel of nature begins in October, when the fruits take on an orange-yellow color turning red. A traditional ingredient of Levantine cuisine, pomegranate molasses results from the reduction of pomegranate juice. The grains thus transform into a thick and syrupy condiment with powerful tangy notes. Carefully prepared by a small cooperative of women in Akkar, our molasses stands out for its entirely natural composition, 100% pure juice. A commitment to an authentic taste which is confirmed in figures: 10 kg of pomegranate are necessary to obtain 50 cl of molasses! This condiment replaces balsamic vinegar to season salads – like “fattoush” – and is excellent for marinating meat and fish.
