The Maya were growing cacao in Mexico's Tabasco region for over 4000 years. For millennia the local spider monkeys were nicking the finest tasting cacao fruits and eating them in the forest. Over time, the cacao seeds on the forest floor morphed into a different cacao variety: the selva tabasqueño. Where modern cacao farmers took on high yielding cacao, the monkeys stayed with the finest flavour. We buy directly from 70 small landholder farmers that have adopted this cacao variety. The cacao beans are expertly harvested, fermented and dried by the farmers. We make our chocolate by stone grinding the beans for more than 72 hours and sweeten them with coconut sugar. We mould this chocolate into truffle shells, then fill them with our own handmade Italian-style hazelnut and chocolate paste called gianduja and finish them with a dusting of cacao.
