The objective for these rillettes was to transcribe the famous “Ray Wing with Capers” from the Dieppe bistro into a fresh, 100% natural, spreadable recipe. The steam-prepared skate wing is deboned and shredded by hand. We add whole nasturtium capers which spice up and add a twist to this original creation. This recipe, of which we are extremely proud, is a whole regional culinary identity captured in a glass jar, for lovers of our land. Owner of the boat "Daniel Auguste II" and manager of the fish trading company "Dieppe Marée", Miguel has embodied the authentic spirit of the fishing profession for more than four decades. HASAt the age of seventeen, he cast his first nets, beginning his career as a simple tide clerk. Today, he is a respected figure in the port.
