Skate wing rillettes from the port of Dieppe, capers

The objective for these rillettes was to transcribe the famous “Ray Wing with Capers” from the Dieppe bistro into a fresh, 100% natural, spreadable recipe. The steam-prepared skate wing is deboned and shredded by hand. We add whole nasturtium capers which spice up and add a twist to this original creation. This recipe, of which we are extremely proud, is a whole regional culinary identity captured in a glass jar, for lovers of our land.
