Pure pork rillettes

These are traditional rillettes made in our manufacturing workshop in collaboration with Franck Putelat, Meilleur Ouvrier de France and double Michelin-starred with whom we have already created 3 cooked dishes: garbure, cassoulet and gardianne, also for sale online on our website. Our rillettes are made according to a local recipe. Simmered for a long time in fat, they are then drained and seasoned (with a touch of garlic for us); then, they are glued back together, meaning that at this stage we manage the proportion of fat and lean. We then can them and sterilize them. Pork rillettes differ from country pâté by the creaminess and relative finesse of each rillette because the pork is shredded. Ideal as a starter or tapas, you can pair it with a charcuterie platter.
