The pieces of veal are simmered for a long time in a court-bouillon of white wine with button mushrooms, onions, carrots (organic from the farm) and bouquet garni. The blanquette is served with succulent organic potatoes and a cream sauce. A treat for the taste buds ! The meat that goes into the composition of this supreme comes directly from a herd of about forty heads where we are particularly attached to animal welfare. Here, the animals born on the farm are not dehorned. They spend a large part of the year in freedom, feeding on grass, fodder, and organic cereals from the farm.
