Discover our artisanal Troccoli del Gargano, typical of the Puglia region. This long pasta looks like spaghetti at first glance and has the specificity of being shaped using a grooved roller called “troccolaturo” or “troccolo” which cuts the dough into regular strips and gives them their particular square shape. Their rough texture adheres well to light sauces and olive oil. They will be perfect for making a typical dish: pasta alle vongole!      The Amicis family has been making its artisanal pasta from durum wheat from the Gargano natural park since 1980 in Serracapriola (Italy). They offer a real artisanal pasta, produced with stone-hulled wheat semolina, drawn in bronze then dried at 26° using a traditional method: slow, horizontally and at low temperature. +Add a drizzle of extra virgin olive oil to your pasta just before serving to intensify the flavors!
