Green olives tapenade

The green olive tapenade is the symbol of what should never be missing in every Sicilian meal… olives! These olives are first pitted, then pounded and finally seasoned with local herbs such as mint, oregano and chilli… they are the queens of the table. Their essence leads them to be an almost essential ingredient that can be consumed in appetizers with meats and cheeses, or completed with bread, or they can be used as a condiment to flavour your first courses or to garnish side dishes.
