Long Tuna Fillets in a Jar / Olive Oil

Santa Catarina is a small cannery on the island of Sao Jorge in the Azores Archipelago. Fishing is done by line with several baits and the variety of tuna is Bonito, prized for its tender and exquisite flesh. In 2011, GREENPEACE awarded them a prize rewarding sustainable fishing that respects aquatic species.     The fish are pre-steamed before the fillets are hand-cut and hand-canned as well. -ORIGIN: The Azores - PT - Tender tuna fillets, very long, fished with a rod - Local olive oil The cannery is celebrating its 20th anniversary this year and since then it has continued to innovate. Apart from the olive oil which comes from mainland Portugal, all the ingredients come from the Island of Sao Jorge. Santa Catarina is a perfect example of a local economy and respectful fishing. In the Azores, men are at sea and women are on land and carefully prepare canned Bonito tuna.
