Landes asparagus is the queen of spring. It grows under the sand between March and May. Like the swallows, it signifies spring and announces the return of sunny days. We cook them in different ways: natural only with cooking juice and lemon, in very pleasant wedges in salad or as an aperitif for their tender side, or in velouté to start the dinner well. It also goes perfectly with poultry or white meat.

 Preparation advice: Drain your asparagus gently but do not rinse it. Pour them into an asparagus dish and enjoy them with mayonnaise or a good homemade balsamic vinegar vinaigrette. You can easily make the traditional Landes salad with a slice of whole foie gras from the South West, or in an omelette with a few chanterelles.
