Hello. My name is Lionel, a child from Auvergne, born in the magnificent lands of Haute-Loire. By creating "POTS POTES", I achieved a personal project that was close to my heart, the result of my experience and an awareness about food, and "producing".
- Produce sustainably. After twenty years in the agro-food industry, I have occasionally noticed certain deviations: The demand for volume takes precedence over the demand for quality; the products are denatured by stabilizers, preservatives, all possible means to extend the shelf life of the products or make them more attractive by means of additives, dyes or other subterfuge ...
However, thanks to the discovery of Nicolas Appert in 1795, for nearly two centuries we have had a simple and natural principle of conservation: sterilization. An ideal method of conservation, using eco-responsible packaging, infinitely recyclable: glass. Sterilization also makes it possible to store products at room temperature, to limit the impact of our food on the environment, by avoiding, among other things, industrial cold logistics, which are particularly harmful. This is what I wanted to put at the center of my approach. Produce sustainably, naturally. Ban additives of all kinds and don't go unnatural. Do not sterilize ingredients that do not support it.
- Responsible production is also "social production". I have the will to bring production back to the heart of our territories, to cooperate with the actors of short circuits and local circuits, to use local ingredients as soon as possible. This makes it possible to perpetuate an entire economic fabric which has deteriorated in recent decades.
- Finally, produce pleasure, because for me canned food is a way of reconnecting with my childhood. How many times has my mom "hired" me to help her, on memorable "ratatouille days" devoted entirely to the production of winter jars. Cooked mushrooms, chanterelles in vinegar, morels, pickles, ratatouille, terrines, head cheese ... So many olfactory memories !! All these productions deliciously perfumed the kitchen and tickled my child's nostrils with all these delicate and tasty aromas! My Madeleine de Proust in a way!
All this culinary, epicurean heritage, I share it now. I like entertaining, cooking to please, arouse gustatory emotions, moments of "feasting" with the people I love ... Pots Potes preserves give me the opportunity to titillate your taste buds, to share with you these moments of happiness, conviviality and pleasure.
