The traditional recipe is a base of tomato sauce simmered with chilli and garnished with a little parsley. When serving, it is usually sprinkled with grated pecorino or parmesan cheese. This sauce originates from the Roman countryside and goes particularly well with penne (penne all'arrabbiata) or tagliatelle. Fry the preparation in olive oil and add your tomato coulis. You can also use it to prepare spicy marinades or on pizzas to give it a boost.
