Widely consumed in northern Italy, Ticino in Switzerland, the County of Nice and Savoy in France, it comes in the form of pancakes or porridge made from semolina or corn flour. Polenta is known by other names, notably in Languedoc under the name of milhàs, in Gascony under the name of cruchade.
