APPELLATION AOP Chinon GRAPE VARIETIES Cabernet Franc 100% TERROIR Plot of vines located on a south-facing hillside, east of Chinon on degraded limestone at a place called La Haute Olive. VINIFICATION Manual and mechanical harvesting. Harvest at full maturity. Total stripping. Fermentation in thermo-regulated stainless steel vats. BREEDING Aging in vats until bottling. SERVICE Between 15° and 17°C . AGING POTENTIAL 10 to 15 years Already brings a lot of pleasure in its youth, but will gain in complexity with the years. CERTIFICATION High Environmental Value COMMENTS AND TASTING A complex and delicate nose with aromas of red fruits complemented by floral aromas (violet, peony) and spices. A fine and generous mouth with silky tannins. Good intensity and persistence. Perfect to accompany roasted or casseroled white meats.
