The MANG has the blade shape of a Japanese classic and is particularly noticeable because of its rather unusual appearance for the European market.    The Japanese original of the knife already indicates its best use - sashimi translates as fish.   Due to its unusual shape, the MANG is ideal for filleting raw fish.     With practice, it is possible to cut very delicately, in a controlled manner and without chipping.   With a slow, pulling cut, you can achieve wafer-thin results - even from ham or roast.     Many of our customers have given us very positive feedback about this model.   As expected, you don't use it to cut sushi as much as you appreciate it as a filleting and meat knife.   For many people, the very unusual look is also an incentive to buy.   With its almost 36 cm total length, the MANG is very impressive and knows how to leave an impression.    The extremely sharp blade requires responsible handling and, in our opinion, disqualifies the knife for households with children.       The blade of this knife is made from recycled leaf spring steel.   This carbon steel's properties make it perfect for knife making.   Thanks to the high carbon content, the knives can be sharpened extremely sharply.     Please note that this is a non-rust-proof material and requires appropriate care.       The handle is made in three parts from ironwood, padauk and jackfruit.
